This presentation will discuss the role that sensory science can play in the development of products for the pharmaceutical and nutraceutical industries. Historically sensory science has had limited application in the development of pharmaceutical products, primarily because efficacy is the focus in their development. However the relationship between product compliance and acceptable sensory properties is now acknowledged. Similarly with the development of nutraceutical products, their sensory properties are key drivers to consumer acceptance and ultimate market success.
The presentation will outline the applications for trained sensory assessors and consumer responses to the process. The requirements for IRB approval, protocol development and study administration will be discussed. Case study examples with paediatric and adult pharmaceutical products and nutraceuticals will be presented.
