The Norwegian Food Research Institute Matforsk is owned by the Agricultural Food Research Foundation, an independent, non-profit organisation. Matforsk is engaged in food research and development. It has approximately 160 employees. With a staff of 4 scientists, 3 market consultants, and 3 engineers, Matforsk is the leading institute for sensory research and contract work in Norway. At present Matforsk has defined four research areas:

  • contribution to market-oriented product development
  • understanding of the interaction between components and ingredients in simple and complex foods
  • development of appropriate and rapid methods for the analysis of quality parameters as close to process as possible
  • increased food safety and improved shelf-life

 

Matforsk serves its food industry clients by assembling and combining the expertise of various areas of research - scientists, technologists and consultants - into the relevant interdisciplinary teams. Products are objectively profiled by a well-trained panel and subjectively tested by consumers.

"Consumer preferences and sensory analysis in product development" is a project which identifies, explores, and models related factors to help explain sensory perception of food in different contexts. Additionally, combining consumer data with product characteristics increases knowledge concerning consumers' needs and preferences for food products.
